Brown Sugar Cupcakes with Chocolate Chip Cookie Dough Frosting

I am in love.



I made these cupcakes Monday night and I have to say this is officially my new favorite frosting.  The cupcake was pretty tasty on its own, but the real star was the frosting.  Whenever I make something super tasty (in particular, my pie crust) my husband Zack likes to say "I would eat a shoe covered in that". That is how I feel about this frosting.  Put it on anything and I am eating it.    In other news, I am still pregnant with baby girl.  She is supposed to make her debut on April 23rd, but I wonder if we will make it that long.  Only a few more weeks and we will know!  Now go make this frosting and thank me later.

Brown Sugar Cupcakes with Chocolate Chip Cookie Dough Frosting

makes 12 cupcakes
1 cup loosely packed brown sugar1 large egg1 tablespoon vanilla extract3/4 cup milk1/2 cup unsalted butter, melted and cooled1 1/2 cups all-purpose flour1 1/2 teaspoons baking soda1/4 teaspoon salt
Preheat oven to 350 degrees F. In a bowl, combine flour, baking soda and salt, stirring to mix. Set aside. Line a cupcake tin with liners.
In a large bowl, whisk brown sugar and egg until smooth. Add in vanilla extract and milk, again mixing until combined. Slowly pour in melted butter, continuing to whisk. Add in the flour, soda and salt, mixing with a large spoon until batter is smooth.
Using a 1/4 cup measure, add batter to liners. Bake for 16-19 minutes, or until tops are puffy and golden, and don’t jiggle when touched. Let cool completely.

Chocolate Chip Cookie Dough Frosting
makes enough for 12 cupcakes
3/4 cup (1 1/2 sticks) unsalted butter
1 3/4 cups powdered sugar
1/2 cup packed brown sugar
1/4 teaspoon salt
3/4 cup all purpose flour
1-2 tablespoons milk
2 teaspoons vanilla extract
1/4 cup chocolate chips
In a medium bowl, beat together the butter, salt, and sugars until smooth and creamy.  Beat in the flour and vanilla until well combined.  Add milk to reach desired consistency.  Stir in chocolate chips or use as garnish.
