S'mores Scones...and a few wedding photos

Sorry for the delay.....I was busy getting married!



I know it has been way too long since I last posted. I have been a little distracted lately, as I got married this past weekend. The wedding was absolutely incredible. Not even a little rain could keep it from being amazing. We leave for our honeymoon next week to Turks and Caicos, but I did not want to keep you waiting that long for a new post.

A couple weeks ago I made S'mores scones for my friends who are new parents. If you have read this blog for sometime you know I LOVE s'mores and these scones were no exception.

S'mores Scones
recipe from Baked Perfection

Scones:
1 1/4 cups flour
1 1/4 cups graham cracker crumbs
3 tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cups chopped chocolate (I used Hershey's)
3/4 cups mini- marshmallows
1 1/4 cups heavy cream
1/4 cup chocolate chips (you can use your left over chopped chocolate if you have it), melted

Preheat oven to 400 degrees Fahrenheit.

Mix flour, graham cracker crumbs, sugar, baking powder, salt, chocolate, and marshmalows. Pour in heavy cream. Mix or knead by hand, just until combined. Mixture will be sticky. Flour surface. Divide dough into two sections and pat into two rounds, each approximately four inches. Using a pizza cutter, cut each round into 8 pieces and place on a greased large cookie sheet. Bake 9 to 11 minutes. Let cool completely, then drizzle w/ melted chocolate.

Banana Peanut Butter Chocolate Chip Muffins

I had some ripe bananas...


...so I decided to make muffins. Yes, it is that simple. Last week I bought way too much fruit for Zack and I to eat in a week, therefore a couple of bananas were left behind. This was the perfect excuse to make banana muffins. Last time I made banana muffins they were devoured so I had to try to figure out to make them even better. In my opinion peanut butter makes just about everything better so I made Peanut Butter Banana Chocolate Chip Muffins. I still don't like banana in my baked goods, so I did not try them, but Zack says they were amazing. He told me he would buy them which is saying a lot since he NEVER buys baked goods without me asking him to. In fact he said I could just sell the batter because it was good enough before being baked.

And just in case you are wondering, Zack and I are getting married in three weeks :)

Banana Peanut Butter Chocolate Chip Muffins
recipe from Baked Perfection

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 ripe bananas, mashed
1/2 cup peanut butter
1/4 cup white sugar
1/4 cup brown sugar
1 tsp vanilla extract
1 egg
1/4 cup butter melted
1 cup chocolate chips
1 tablespoon flour
1 tablespoon turbinado sugar

Preheat over to 375 degrees. Grease or line 12 muffin cups.

In a large bowl mix together 1 1/2 cups flour, baking soda, baking powder, salt, and cinnamon. In a second bowl beat together bananas, peanut butter, sugars, vanilla, egg, and melted butter. Stir the banana mixture into the flour mixture until just combined. In a small bowl mix together the chocolate chips and 1 tablespoon flour (this will prevent the chocolate chips from sinking). Stir the chocolate chips into the batter. Spoon batter evenly into the prepared muffin cups. Sprinkle the tops of each muffin with turbinado sugar. Bake in preheated oven for 12-15 minutes, until a toothpick inserted into the center of a muffin comes out clean.
