Banana Peanut Butter Chocolate Chip Muffins

I had some ripe bananas...


...so I decided to make muffins. Yes, it is that simple. Last week I bought way too much fruit for Zack and I to eat in a week, therefore a couple of bananas were left behind. This was the perfect excuse to make banana muffins. Last time I made banana muffins they were devoured so I had to try to figure out to make them even better. In my opinion peanut butter makes just about everything better so I made Peanut Butter Banana Chocolate Chip Muffins. I still don't like banana in my baked goods, so I did not try them, but Zack says they were amazing. He told me he would buy them which is saying a lot since he NEVER buys baked goods without me asking him to. In fact he said I could just sell the batter because it was good enough before being baked.

And just in case you are wondering, Zack and I are getting married in three weeks :)

Banana Peanut Butter Chocolate Chip Muffins
recipe from Baked Perfection

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 ripe bananas, mashed
1/2 cup peanut butter
1/4 cup white sugar
1/4 cup brown sugar
1 tsp vanilla extract
1 egg
1/4 cup butter melted
1 cup chocolate chips
1 tablespoon flour
1 tablespoon turbinado sugar

Preheat over to 375 degrees. Grease or line 12 muffin cups.

In a large bowl mix together 1 1/2 cups flour, baking soda, baking powder, salt, and cinnamon. In a second bowl beat together bananas, peanut butter, sugars, vanilla, egg, and melted butter. Stir the banana mixture into the flour mixture until just combined. In a small bowl mix together the chocolate chips and 1 tablespoon flour (this will prevent the chocolate chips from sinking). Stir the chocolate chips into the batter. Spoon batter evenly into the prepared muffin cups. Sprinkle the tops of each muffin with turbinado sugar. Bake in preheated oven for 12-15 minutes, until a toothpick inserted into the center of a muffin comes out clean.
