Chocolate Mint Chip Cookies (a.k.a Polka Dot Cookies)

Just like an Andes Mint.


A few weeks ago I discovered the wonders of a great store, World Market. I am sure I am the last one to realize how great it is, but either way I am glad I did. I went there because I heard they sold spices at great prices which was definitely true. My cabinet is now stocked with all kinds of dried herbs and spices and it cost me a fraction of the super market prices. I was wandering around the food section at the store and came across some Guittard Green Mint Chips. They also had Cappuccino Chips, but since I am not a coffee person those did not appeal to me. I had heard great things about Guittard so I thought I would get the mint chips and would figure out something to make with them. Well I did not have to go far to find a recipe. It was last Sunday night and I had just finished making a pot of Gumbo. The mint chips were sitting in a basket I keep on top of my fridge filled with random baking items. I just kept looking at them and decide at 9pm on Sunday night I was going to make something. I grabbed the package and right on the back was a recipe entitled "Polka Dot Cookies". I am calling them Chocolate Mint Chip Cookies purely because it annoys me when you see the name of a dessert and it does not hint to what it is. Anyway, I followed the recipe exactly and they came out perfectly! They almost had the texture of a brownie in a cookie form and the mint chips were smooth and creamy. After we tasted the finished product we thought this cookie base would be amazing with any time of chip. So if you want double chocolate toss in some chocolate chips. I wold love to try some peanut buter chips myself! I definitely want to try more Guittard products in the future.

Chocolate Mint Chip Cookies (a.k.a Polka Dot Cookies)
recipe from Guittard

2 cups semi-sweet chocolate chips
1/2 cup butter
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/8 tsp salt
3 large eggs
1/2 cup sugar
2 tsp vanilla extract
2 cups Guittard Green Mint Chips

Preheat oven to 350 degrees F. In top of double boiler over low heat, melt the semi-sweet chips and butter, stirring constantly until smooth. Set aside to cool. In small bowl combine flour, baking soda and salt; set aside. In large bowl, beat eggs, sugar, and vanilla until light. Blend in melted chocolate then dry ingredients. Stir in green mint chips and chill for 10-15 minutes or until stiff. Drop by well-rounded teaspoonfuls onto greased cookie sheets. Bake 8-10 minutes; cookies will be soft inthe centers but will firm up as they cool. Yeilds approximately 4 dozen cookies.

I see those candies in the baking aisle all the time but haven't bought them yet. I love when you go to a restaurant and they give them to you after dinner. : )

And I agree with you that recipes should indicate as to what they are, and not have totally vague names.

I think these cookies look absolutely delicious!
Unfortunately we only have dark, milk or white chocolate chips available in Australia, so unfair, we are so behind in the times...I so badly wish we had candy melts too...
Perhaps I'll give this recipe a go with normal milk choc chips.

This recipe is similar to one I make with pb chips! It is definitely worth your time to try the pb chips and I am going to try some mint chips!!

Sounds like these would be a great Christmas tray cookie! I'll have to check if we have a World Market here.

I love this recipe, too! If you can't find the Guittard brand chips, check the bulk candy section of the grocery store--in a pinch, I've used those yellow, pink, and green minty nonpareil chips to replace the mint chips...only difference is that the cookies are even more colorful!

Wow. These kind of cookies are right up my alley. It really doesn't get better than chocolate/mint combo. And I LOVE Guittard! Sometimes my favorite recipes come from the back of packages I buy :)

haha! I agree on the recipe that doesn't give any indication to what it is! These look great and I have never even seen mint chips! I used to live in Houston and there was a World Market near my house, but up here in NJ I have yet to find one...BOOO!

I have a bag of those. I made some of the NY Times cookies a few months back and put those in them. GREAT taste, I just don't care of the strange green color. Reminded me of doctor's clothing. BUT, I will say that I kind of like the look of them better in your chocolate cookie. Now I know what to do with the other bag I still have! I love mint/choc together.

I used some of those mint chips last month to make mint fudge for my dad's birthday (the Marshmallow Creme recipe, subbing 1C mint chips for 1/2 the chocolate chips) -- but I never thought of using them for cookies (& never read the bag, obviously).

I ran into the picture of your cookies this morning & they looked so good that I considered making them for Father's Day this weekend -- but when I read about the cappucino chips, I decided to use those instead, since my dad also loves coffee & chocolate together. I didn't know those existed, but I did indeed find them at World Market (fka Cost Plus) & got the last bag.

I just made 1/2 your recipe as a test for Father's Day & they are wonderful -- also easy & apparently foolproof, since I'm not a great baker.

My dad's going to be thrilled with these -- I'll make him a batch of your mint version for Christmas & I know he'll love those too.

I'm so glad I stumbled across your blog -- thanks from me & my dad!

I love World Market. They do have good spices. I used to go there all the time when I lived in Chicago. My favorite was all the great dishware.
