S'mores Cookies

These cookies are every bit as delicious as they look.























You may have noticed that I have been in a s'mores kick lately. First with the cookie dough pops, then with these cookies. I also plan to make additional s'mores themed treats this weekend. I saw a version of s'mores cookies on Make and Bake and became immediately intrigued. I knew I had to try to make these...the sooner the better. I ended up making these cookies right before I went to Hilton head with my girlfriends and they were dangerously delicious. In fact, I think I liked these even more than my chocolate chip cookies and I did not think that could be possible! These cookies are multi-taskers; they satisfy your craving for cookies and s'mores. I am telling you that you have to try these!

S'mores Cookies
adapted from Make and Bake

1 1/2 cups all purpose flour
1 cup graham cracker crumbs
1 teaspoon baking soda
1 teaspoon salt
1 dash of cinnamon
1 cup (2 sticks) butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups miniature chocolate chips
1 1/2 cups mini marshmallows
2 Hershey bars, chopped

Preheat oven to 375 degrees.

In a medium bowl combine the flour, graham cracker crumbs, baking soda, salt, and dash of cinnamon. In a second larger bowl beat together the butter, sugar, brown sugar and vanilla extract until creamy. Add the eggs one at a time, beating well after each addition. Slowly beat in the flour mixture until smooth. Stir in the chocolate chips. Drop by rounded tablespoon onto ungreased cookie sheet.

Bake for 8 minutes, and remove from the oven. Push 3 to 4 marshmallows and a few pieces of hershey bar into each cookies. Return to the oven and bake an additional 3-4 minutes until fully cooked. Cool cookies on a wire rack.

Makes approximately 4 dozen cookies.

OH MY GAH, Risa. These look UHMAZING. Can we just start calling each other sister, or maybe K.S. for kindred spirit? These cookies are just more proof of our shared tastes in food. Man oh man, I wish I lived next door. If I did, you'd find me in your kitchen right now shoving these cookies into my mouth. Yep, not a pretty picture, but hey, sometimes the truth ain't pretty. I HAVE ONE QUESTION CAN I SUBSTITUTE THE 1 CUP OF BUTTER FOR MARGARINE. THE REASON I ASK IS THAT
I AM KOSHER, AND IT WOULD BE EASIER

These were THE BEST COOKIES i have ever made - so impressive and the recipe was perfect!

The cookie base had a great graham cracker taste mixed with gooey marshmallow's and chocolate on top. Definitely a comfort food cookie.

I first made them a few weeks ago, froze the left over batter, and finished it off tonight.

PERFECTION!

I made these and they were absolutely delicious, but they spead a lot which I wasn't prepared for. They all kind of stuck together which was ugly, but my friends didn't mind. =]. Do you have any idea how I could prevent that next time?

I think you could use whole wheat flour. It will change the texture though. You can always try to do half whole wheat and half regular.

I made these today. Only real change I made was adding a bit of cocoa powder to the mix (since I got some crappy knock-off chocolate chips, unfortunately). I just took a bite of one, and OH YUM! I'm definitely going to keep this recipe around. Thank you so much for sharing!

Ok, so I hate to say this, but I was disappointed. I made these cookies because I was assigned to make dessert for a hiking and hut trip. I found it difficult to tell when the cookies were "done" due to their already dark color. I had to cut the mini-marshmallows in half to get them to look like the picture. It also took about 5 hershey bars, not 2 to put just 3 pieces on normal size cookies. I'm not a new baker, I've made pretty complex cookies before. I think they taste like glorified chocolate chip cookies. Overall, I don't think the effort is worth the result. Maybe it's the altitude, tho I don't normally have to adjust recipes(Denver).*

I was enticed by the picture, which is precisely how they turn out...unless you stack them. I tried packing these up and the marshmallow sticks to everything. I probably should have thought of that, but it is still a major downside if you can't take these anywhere! These are cookies to be served immediately or put on a platter. Even wax paper or aluminum foil will take all the marshmallow it touches.

It will satisfy your craving for a s'more, but it will be hard to pass on the love.

GREAT COOKIE RECIPE!! My boyfriend and I made this recipe for a Christmas party and it turned out great. We followed the recipe exactly...but unlike the pictures shown, we put two mini marshmallows and one square of Hershey's chocolate on each cookie...we couldn't fit anymore on and didn't want to overwhelm the cookie. The only thing we would change with this cookie recipe would be to eliminate the chocolate chips and just have the chocolate bar pieces on top. :)

I made these for the volunteers at a practicum I attended this past week. They ended up selling them instead to make money for our scholarship fund and they sold like mad! They turned out SO good and I didn't even have the chocolate bars- just put larger chips on the top! I am getting ready to make my family some more right now. I can't wait! They were SO yummy!

I made a 1/2-batch of these this morning. I found 375 to be too hot and the cookies were super flat and super brown so I added a 1/2 c of flour and baked them at 350 for about 8 minutes. That solved my problem. They taste amazing!!! I felt like I was in the woods sitting around a campfire!! Thanks for a fun way to eat s'mores without getting marshmallow all over your face (though that's part of the fun).

I wanted to add that I just decided to put all the cookies I made under the broiler for a few seconds to brown the marshmallows - they look great and I ate another one...they taste SOOOOO good! Thanks again for another great recipe!

I bought a muffin top pan to make these in and they are fantastic. Better made on a silpat mat if doing them on a regular cookie sheet.

Baked these to take to a pig roast potluck while camping. They were a huge hit and people are begging for me to bake them again. I never bake, but I followed this recipe to a T and it was easy! I loaded them with marshmallows w 1 piece of chocolate on top. Anymore it'd be too sweet. Thanks!!

man i love this recipe. second time i've made them, delicious just lik the first time, however, my cookies always fall flat! and the ones in that picture seem to have good volume to them..how can i retain normal cookie thickness?

If you find these cookies are turning out a little flat for you. Just add a little more flour. It should do the trick.

Ok.. so I just tried making these today.. and don't get me wrong, they are absolutely delish. BUT. I live at a seriously high altitude and they fall flat every single time. I tried adding flour, I tried messing with the bakin time. Nothing worked. Do you have ANY suggestions at all for baking these at a high altitude? Many of my other cookies do this and I have yet to figure out a solution!! Please, anybody??

these cookies are the ultimate comfort food! it is really great to know we can be innovative with our favourite camping snack and have it all year round. Only trick is you got to know how much dough to put on your cookie sheet or else it will turn to complete mush. Great recipe!
