Take a closer look.
At first glance these may look like your typical cake pop made famous by Bakerella, but once you take your first bite you will realize these are not cake pops. Here take another look.
Yep, that is chocolate chip cookie dough in that pop (don't worry, there are no raw eggs). I was talking with Elyse, of the wonderful Elyse's Confectionery Creations, and she and I were wondering what we can make to be the next big thing. We have lofty dreams of opening a bakery together one day so we needed something to get us the much needed exposure. Something that had not been done before (or at least that we had not known had been done, I apologize for taking credit if you made these first) and would appeal to the masses. We came up with a few ideas, and although they seemed good, they were not exactly what we were looking for. I am not sure how this idea popped in my head, but I must have been thinking about Bakerella's cake pops. I have made cake pops and brownie pops, but had anybody made cookie pops? When I mentioned it to Elyse she was confident this was what we needed to make. We discussed technique and flavors. In the end we decided chocolate chip would be perfect since it is traditional. Then the next day Elyse came up with the great idea to also make a S'mores Cookie dough pop. So this Sunday Elyse and I baked together from either end of the country. She being in Berkeley and me being in Washington, DC, connected by Gchat.
I found these pops to be extremely delicious and simple to make. You don't have to bake anything so it is a perfect recipe when it is too hot to use the oven. Any cookie recipe will work you just need to tweek it a little to adjust for not using eggs. I hope these catch on like the cake pops have. Now when you finish here make sure to check Elyse's post.
Chocolate Chip Cookie Dough Pops

1 cup all purpose flour
1/4 tsp salt
dash of cinnamon
1 stick butter, softened (it is even okay if it is melting a little)
1/2 cup brown sugar
1/4 cup sugar
1/2 tsp vanilla extract
3/4 cups mini semi-sweet chocolate chips
Assorted candy melts:
1/2 package white chocolate candy melts
1/2 package chocolate candy melts
1/4 cup light blue candy melts
In a medium bowl combine the flour, salt, and dash of cinnamon. In a second larger bowl, beat together the butter, sugar, brown sugar, and vanilla extract until creamy. Slowly beat in the flour mixture until smooth. Stir in the chocolate chips. Roll the mixture into quarter size balls and lay on cookie sheet lined with wax paper (Should make approximately 20) and insert a lolly pop stick. Chill for several hours or freeze for 15-20 minutes until firm.
Melt candy melts in the microwave per directions on package. (30 sec intervals, stirring in between.) Gently dip the cookie dough ball into the candy coating by holding the lollipop stick and rotating until covered (if your lolly pop stick falls out, just dip the end in the melted chocolate and put it back in the ball). Once covered remove and softly tap and rotate until the excess chocolate falls off. Place in a styrofoam block to dry.
To decorate with drizzled chocolate, place chocolate in a sandwich bag on a microwave safe dish and microwave in 30 second intervals moving the chocolate around between. Using scissors, cut the very tip off the sandwich bag. The smaller your cut, the smaller the drizzle. Use the sandwich bag to pipe the chocolate back and forth over the cookie dough pop until you reach the desired look. Return to styrofoam block to dry.
S'mores Cookie Dough Pops

3/4 cup chopped Hershey's Milk Chocolate Bar
3/4 cup mini-marshmallows, halved
Assorted candy melts:
1/2 package white chocolate candy melts
1/2 package chocolate candy melts
In a medium bowl combine the flour, 1/2 cup graham cracker crumbs, salt, and dash of cinnamon. In a second larger bowl, beat together the butter, sugar, brown sugar and vanilla extract until creamy. Slowly beat in the flour mixture until smooth. Stir in the chocolate and marshmallows. Roll the mixture into quarter size balls and lay on cookie sheet lined with wax paper (Should make approximately 20) and insert a lolly pop stick. I still haven't tried brownie pops and now I'm going to have to add s'mores pops to my list. I did a choc. chip cookie dough truffle for xmas but mine used sweetened condensed milk and it was just too sweet. I'm going to have to give your recipe a try. They look amazing.

I've wondered about something like this before. Since I don't really like cake, the cake pops don't really appeal to me. I'm wondering if these would need to be refrigerated because of the butter if you need to make them ahead? What does everyone think?
I personally would love a Snickerdoodle pop, but I can't figure what kind of candy melt to use. All that's coming to mind is to go with a cinnamon chip that's been melted? Any other suggestions?
I have been storing them in the fridge and I recommend serving them chilled. So if you make them for a party, just keep them in the fridge until party time.
For a snickerdoodle pop I would use the traditional snickerdoodle cookie dough, but mix the cinnamon in sugar into the dough. I would dip it in white chocolate and perhaps sprinkle it with more cinnamon and sugar.

I dipped half the pops in white chocolate. The blue drizzle is actually blue candy melts that I bought from the craft store. I did not have to color them or anything which made these even easier.

You are a genius. I've been wanting to make cake pops or cupcake pops for ages, but I don't have anyone to make them for, and I don't think the husband would be that impressed. Too much "cute factor" for him. But...he LOVES cookie dough. I think his love for the fabulousness that is cookie dough would overshadow his skepticism based merely on their adorableness. I've had these bookmarked for quite a while, and decided to make a mint version. used your cookie dough recipe above, but used mint extract instead of vanilla, added some cocoa powder, and used mint chips.Fabulous!

I just made the cookie dough pops, but as truffles to give as a gift. There were awesome. I used almond bark instead of candy melts, works just fine. I also think that I would make it without any cinnamon next time. The flavor is so perfect, I might make a batch of the cookie dough just to eat. Thanks for the great idea, I can't wait to try the peanut butter, smores and oreo ones.

These sound delicious! I am not a big fan of cake so cake pops aren't my thing, but cookie dough is a different story! Treats on a stick are the best. I just made some cookie pops for my blog and they turned out pretty cute. Thanks for the tutorial!

This recipe is fantastic! I just made some in a heart shape for my boyfriend this coming valentines day! I wrapped them in cellophane and tied it round the stick with a red ribbon :) Thanks for this! He will love it x
