White Chocolate Chip Cranberry Oatmeal Cookies

Same Cookie, different song.



















Last week when I made the Oatmeal Scotchies I also made these little gems. All I had to do was divide the batter in half before stirring in the chips. So I may have cheated a little by not baking twice, but why not bake once and get two cookies? I am flying out of town today for a week, so I may not get a chance to post this week. Perhaps I will do some reviews of the food I eat while out of town. Anyway, I hope you enjoy this oatmeal cookie spin-off.


White Chocolate Chip Cranberry Oatmeal Cookies

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract or grated peel of 1 orange
3 cups quick or old-fashioned oats
1 cup white chocolate chips
1 1/2 cups dried cranberries
Preheat oven to 350° F.

Combine, flour, baking soda, salt and cinnamon in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large bowl. Gradually beat in flour mixture. Stir in oats, cranberries, and white chocolate chips. Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 10-12 minutes. Cool on baking sheets for 1 - 2 minutes; remove to wire racks to cool completely.

white chocolate... really. the photo looks great, but the previous recipe looks like it would be more of my weakness.

I always use brandy instead of vanilla on these cookies. You can get a small 4oz bottle of the brandy at liqueor stores. It adds an unexpected richness to the cookies (As if they weren't already rich enough!)

just a thought. i love these cookies.

These were delicious! I added a bit less sugar and added some shredded coconut and walnuts to it. They were a huge hit!

Yum! I just made these, and they are incredible! I used chocolate covered cranberries instead of the chocolate chips and cranberries, and they turned out great! Great site!

I made this recipe and was thrilled! I actually cut it in half just to do a test run, and was pleasantly surprised. I think I'll cut back on the cinnamon next time, though, just to make sure I get the taste of the cranberries. I really love this recipe! Thanks so much!

Just thought I'd give one tidge of advice for this one... it'll make a world of difference!

Beat together the eggs and the vanilla (and you can use up to 1 tablespoon of vanilla, trust me!).
Then, soak your dried cranberries in the liquid for an hour or so (two would be even better). Or you can put the cranberries in a pot of water, bring it to a rolling bowl, and then turn it off. That takes less time, and you get a similiar effect.
