Oatmeal Scotchies (a.k.a, my weakness)

I promise I will only eat one more.....




























I do not know what it is, but something about this cookies causes me to lose all will power and self control. I am a peanut butter and chocolate girl, but when these cookies are around I can not get enough. I have not made these cookies in the past three years and the reason is because I can not stop eating them! The butterscotch mixed with the oatmeal and cinnamon is the ultimate combination. My boyfriend assumed he would not enjoy these cookies, but after just one bite he became a believer. I hope you try these cookies and love them as much as I do. I will not be making these again anytime soon, so I hope you enjoy (perhaps a batch of these will show up around my birthday in November)

Oatmeal Scotchies

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract or grated peel of 1 orange
3 cups quick or old-fashioned oats
1 11-oz. package butterscotch chips
Preheat oven to 350° F.

Combine, flour, baking soda, salt and cinnamon in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large bowl. Gradually beat in flour mixture. Stir in oats and butterscotch chips. Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 10-12 minutes. Cool on baking sheets for 1 - 2 minutes; remove to wire racks to cool completely.

i'm being completely serious when i say that these are my favorite cookie. i always, always eat way too many at a time, so i only make them for special occasions. :)

YUM! i know what you mean about cookies :-) i think it's the texture and the fact that they kind of bring you back to your youth. cookies = happiness.

I made these last night and they are delicious. I even substituted Baking Splenda and Splenda Brown Sugar Blend. I think because of the butterscotch morsels this is a very acceptable substitution.

These looked exactly like the ones my grandmohters neighbor used to make, so I gave them a try. Taste the same too! Thanks so much for the recipe! One question, How do you keep them from sticking to the cookie sheet? I cant get them up without mangling them! Granted, cookie bits are just as yummy as cookies, but I'd like a few whole ones! ;-)

Hi Sera,

I have never had a problem with them sticking, but a few things you can try would be to grease your cookie sheet, bake on parchment paper, or use a silpat baking mat.
