S'more Cookie Bars

Better than being around a campfire!































Now don't get me wrong, I think making s'mores around the campfire can be a ton of fun, but why go through the hassle of planning a camping trip or finding firewood if you can bake up a batch of these beauties without all the trouble. I saw this recipe on Baking Bites and could not wait to make them. I followed her recipe with the exception of using dark chocolate instead of milk chocolate and they were amazing! I brought these into work on a Sunday when there were only 7 of us there (I am an auditor so I often work weekends) and by Monday morning there was only one left. These are definitely going to be a "go-to" dessert going forward.

S'more Cookie Bars

1/2 cup butter, room temperature
1/4 cup brown sugar
1/2 cup sugar
1 large egg
1 tsp vanilla extract
1 1/3 cups all purpose flour
3/4 cup graham cracker crumbs (approximately 7 full graham crackers)
1 tsp baking powder
1/4 tsp salt
2 super-sized (5 oz.) dark chocolate bars (e.g. Hershey’s)
1 1/2 cups marshmallow creme/fluff (not melted marshmallows)

Preheat oven to 350°F. Grease an 8-inch square baking pan.

In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla.
In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. Two 5 oz. Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread marshmallow fluff evenly over the chocolate layer.

Place remaining dough in a single layer on top of the fluff. This is most easily done by putting the second half of the dough in a gallon size freezer bag. Use your palms to flatten it out, and then use scissors to cut down both long sides of the bag, so it will open up book-style. Open it up carefully, and the dough will stick on one side of the bag. Then place the bag, dough side down, on the other three layers. From there peel the bag up ad spread the dough where it is uneven.

Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars

Makes 16 cookie bars.

I have made these twice since I saw that post and second time I increased everything. They were wonderful. If I wasn't in the middle of a move, I would make another pan after seeing yours.

This looks so great and it is not as messy as trying to navigate yourself around a campfire while the marshmellows are dripping from the hanger and sticking to your fingers!! This is the best of both worlds.

Looks great will put this on the must make list

Your asterisk doesn't lead anywhere. If you look at the original recipe, the asterisk says that 7 crackers is about what you need.

Anyhow... I'm making them right now and they look delicious!

If you have a Silpat baking mat & don't have a large plastic bag you can measure the 8" top layer onto it and then invert on the marshmellow fluff. YUMMMMMMM!

These look delicious! Can't wait to try them, I currently have a pan in the oven :) I used a 9x9 pan and barely had enough dough so I would probably double the dough recipe and if there is enough left over bake something else out of it!

I just made three batches for a party tonight. It tastes unbelievable, but my marshmellow fluff and chocolate are oozing everywhere.. It does not form a "cookie bar" like the picture. They were cooled completely. What could my problem be!?

Mine were pretty gooey too. I let them sit overnight before I cut them which may have helped.

would it work to use mini marshmallows instead of fluff?

Hi Katie,

I think mini-marshmallows would work, but it would produce a different result. The marshmallows are going to get really puffy! unfortunately I have never tried using them so I am not sure how many you would need.

These look devine! However, when I use marshmallow fluff (as delicious as it is) a lot of choice words come out of my mouth. What is your suggestion how to spread over the chocolate? pam on the fingers?

I took two pans of these to an event with some of my students...needless to say they were picking the crumbs out of the pan when they were all gone! Glad I got to eat one before I brought them to my students!
